Ingredients (10)

2.00 kg beef — corned silverside
2.00 onions — large
12.00 cloves
fresh thyme — sprig
fresh parsley
6.00 black peppercorns
1.00 turnip
2.00 carrots
1.00 celery stalks — whole head
2.00 leeks

Method:

Place the beef in a saucepan and barely cover with water.
Press the cloves into the onions and place in the pan along with the herbs and pepper. Cover and simmer for 20 minutes.
Cut the turnip, carrots, celery and leeks in large pieces and add.
Simmer for a further 60 minutes.
Serve the vegetables with the meat. The leftover stock can be used to make a soup with vegetables added.
