Corned beef in mustard batter

    cake flour
  • 1
    large egg
  • 20
    wholegrain mustard
  • salt and freshly ground black pepper to taste

    large egg whites
  • oil for deep-frying
  • 8
    slices cooked corn beef
  • extra flour, to dust
  • veggies, to serve


20 to 30 minutes
Whisk the flour and egg together until well combined. Add the mustard and seasoning to taste, then whisk in the beer gradually. Set aside for at least half an hour. Beat the egg whites until stiff. Fold into the batter. Heat the oil in a saucepan or deep-fat fryer. To test whether its hot enough add a cube of white bread. It should turn golden brown within 45 seconds. Dust the meat with flour then coat well with the batter. Deep-fry two fritters at a time until golden. Serve hot with veggies of your choice and extra mustard on the side.
