Ingredients (10)

1.00 onion — grated
2.00 potatoes — large, grated
350.00 g corned beef — sliced
4.00 eggs — lightly beaten
65.00 ml fresh parsley — chopped
2.00 tomatoes — large, peeled, deseeded and chopped
35.00 g butter
10.00 ml oil
250.00 ml cheese — grated

Method:

1. Pat onions and potatoes dry with absorbent paper. Combine onion, potato, beef, eggs, parsley and tomatoes in a bowl. Mix well.
2. Heat oil and butter in a 31 cm frying pan, swirl to coat base and sides evenly. Add corned beef or leftover meat, press mixture evenly into pan, cook over a low heat for about 30 minutes, or until underneath is well browned and mixture firm. Sprinkle with cheese and paprika and place under a hot grill.
