Ingredients (9)

500.00 ml sweetcorn — off the cob
410.00 g kidney beans — or pinto beans
2.00 tomatoes — peeled and chopped
1.00 onion — chopped
65.00 ml fresh basil — chopped
30.00 ml fresh chillies — 573
30.00 ml lemon juice — fresh
30.00 ml fresh parsley — chopped
2.00 garlic — cloves, crushed

Method:

1. Combine corn, beans, tomatoes, onion and basil in a large bowl.
2. Whisk together oil, lemon juice, parsley and garlic.
3. Stir into corn mixture. Season with salt and pepper.
