Corn and feta fritters

Ingredients (8)

105 g flour — sifted
2 eggs — jumbo
60 g butter — melted
1/2 cup milk
sea salt and freshly ground black pepper
1x 410 g sweetcorn — tinned, drained
100 g feta cheese — crumbled
5 g fresh chives — chopped

Method:

Place the flour in a bowl. In a jug, whisk together the eggs, butter and milk; add to the flour and stir to combine. Season with salt and black pepper. Stir through the corn kernels, feta and chopped chives.

Heat a large frying pan, brush with a little butter. Spoon tablespoons of the mixture into the pan and cook for 2-3 minutes on each side.

Remove from pan and drain on paper towel.

To serve:
Divide fritters between 4 serving plates and sprinkle with extra salt or pepper.
