coriander pesto and prawn spaghetti

    fresh coriander
  • 2
    garlic, chopped
  • 1
    red chilli, chopped
  • 1
    salt to taste

    pine nuts, toasted

    extra-virgin olive oil

    spaghetti, cooked al dente

    prawns, shelled

1. In a pestle and mortar or a food processor, smash or process the coriander.
2.Add the garlic, chilli and salt, and process until you have a wet paste. Add the nuts and grind these as well.
3. Mix in the oil drop by drop until you have a rich green sauce.
4. Heat a little olive oil in a non-stick frying pan and cook the prawns in two batches. Toss in the pasta with a little of the reserved cooking liquid and rocket. Stir in the pesto and enjoy!
