Coriander pesto

  • 150
    grated Parmesan or pecorino cheese
  • 2
    cloves garlic, peeled
  • 100
    shelled pistachio nuts
  • 60
    fresh coriander, well rinsed and dried
  • 250
    olive oil
  • salt and milled pepper


In a food processor or blender combine cheese, garlic and nuts until mixture looks like coarse breadcrumbs. Add herbs and blend for 10 seconds. With the machine running, pour in oil in a steady stream until mixture forms a thick paste. Season to taste and briefly blend again to combine. Store in a clean glass jar. Makes 500 ml.
