Ingredients (6)

150.00 g parmesan cheese — or pecorino cheese, grated
2.00 garlic — cloves, peeled
100.00 g pistachio nuts — shelled
60.00 g fresh coriander
250.00 ml fresh chillies — 573
salt and freshly ground black pepper

Method:

In a food processor or blender combine cheese, garlic and nuts until mixture looks like coarse breadcrumbs.
Add herbs and blend for 10 seconds. With the machine running, pour in oil in a steady stream until mixture forms a thick paste.
Season to taste and briefly blend again to combine. Store in a clean glass jar. Makes 500 ml.
