Ingredients (14)

SALAD DRESSING
125.00 ml fresh coriander
60.00 ml vinegar — apple
10.00 ml Dijon mustard
3.00 ml cumin — ground
2.00 garlic — cloves, crushed
3.00 ml black pepper — freshly ground
2.00 ml salt
125.00 ml olive oil — extra virgin
0.50 lemon — juice only
SALAD
1.00 kidney beans — tinned and drained
1.00 butter beans — tinned and drained
1.00 sweetcorn — tinned
1.00 red onion — medium, chopped
0.00 lemon — or lime, sliced

Method:

SALAD DRESSING
Blend all the salad dressing ingredients in a food processor until smooth.
SALAD
Mix the beans, sweetcorn and onion in a large bowl and drizzle with half the salad dressing.
Adjust the seasoning if necessary.
Add the rest of the salad dressing to the salad just before serving and mix lightly.
Garnish with lemon or lime slices and serve at room temperature.
