Ingredients (9)

60.00 g butter
100.00 g bacon — rindless streaky, diced
12.00 pickling onions — peeled
1.00 kg chicken — pieces
30.00 ml flour
2.00 garlic — cloves, crushed
600.00 ml wine — red
3.00 ml dried mixed herbs
250.00 g button mushrooms

Method:

Heat butter in a saucepan and add bacon and onions. Fry gently for five minutes then remove from the pan and reserve.
Fry chicken pieces until golden brown, then sprinkle with flour. Stir in bacon, onions and garlic and cook for a minute.
Add wine gradually, then add herbs and season to taste. Cover and allow to simmer for 30 minutes.
Add mushrooms and simmer for 10 minutes then serve.
