Ingredients (12)

30.00 ml fresh chillies — 573
6.00 baby onions
2.00 garlic — cloves, crushed
6.00 bacon — rashers
6.00 chicken breast fillets — halved
0.00 flour — to dust
500.00 ml wine — red
250.00 ml tomato juice
0.00 fresh thyme
6.00 brown mushrooms — halved
0.00 salt and freshly ground black pepper
30.00 ml cornflour

Method:

Preheat oven to 180 degrees C. Heat olive oil in a large casserole dish.
Add the onions, garlic and bacon.
When they are starting to brown, dust the chicken pieces in flour and add them to the casserole.
Sauté until they are nicely brown all over.
Add the wine, tomato juice, thyme, mushrooms and seasoning.
Cover and bake for 30 minutes.
Blend the cornflour with a little water to a smooth paste and stir into the bubbling casserole.
