Concertina potatoes

    large potatoes, scrubbed
  • 6
    slices ham, chopped
  • 150
    grated Cheddar cheese
  • 15
    chopped parsley
  • salt and ground black pepper
  • 65
    margarine, melted


Preheat the oven to 200 °C and lightly grease an oven dish with margarine. Cook the potatoes in their jackets in salted water or in the microwave oven until just tender. Drain and cool. Slice each potato, but take care not to cut them alI the way through. Mix the ham, cheese and parsley. Season generously and spoon a little of the filling in between the potato slices. Drizzle a little of the melted margarine on top and bake until heated through, about 10 minutes. Serve hot with a green salad.
