Comforting couscous

  • 500
  • 60
    melted butter
  • 250
    boiling water


Using your fingertips, gently rub the butter into the couscous (this helps separate the grains).
Pour over boiling water, stir well with a fork and leave for 10 minutes. Fork through the couscous to separate the grains.
Put into a steamer or colander, place over a pot of gently cooking vegetables or meat stew and steam, uncovered for 15 minutes.
Fork through the couscous again to separate the grains. Alternatively, cook in microwave for five minutes or on top of stove over a low heat for 10 minutes, stirring occasionally to separate grains.
Turn onto a warm serving dish, form into a mound with a large well in the centre and ladle the vegetable or meat stew onto couscous.
