Cold pea and mint soup

A refreshing chilled summer soup that you really should try – and it’s equally delicious served warm.

Ingredients (7)

30 ml butter
10 ml fresh chillies — 573
1 leeks — sliced
1 kg peas — frozen
1 stock — chicken
250 ml fresh mint
yoghurt — Greek

Method:

Heat the butter and oil in a saucepan and sauté the leeks until soft. Add the peas and stir until coated, then add the stock and bring to the boil. Simmer for about 15 minutes, then add 250ml fresh mint leaves.

Purée the soup until smooth, taste and season if necessary. If you’re serving the soup at room temperature or chilled, garnish with Greek yoghurt and fresh peas. If you would like to serve it warm, garnish with fresh cream.
