Ingredients (11)

2.00 kg calamari — rings
4.00 bay leaves
375.00 ml oil
65.00 ml vinegar
4.00 onion — chopped
1.00 onion — sliced
1.00 fresh parsley — large bunch
3.00 garlic — cloves, crushed
salt and freshly ground black pepper — to taste
125.00 ml lemon juice
10.00 ml black peppercorns

Method:

1. Cook calamari in boiling water with the bay leaves, peppercorns, sliced onion, a third of the parsley, salt and pepper until white and firm.
2. Put garlic, onions and remaining parsley into blender, process until fine. Add 100 ml oil, salt, pepper, lemon juice and vinegar, and mix again. Slowly add the remaining oil until mixture turns thick and creamy.
3. Pour over calamari and marinate overnight. Serve cold.
