Cold garlic soup with grapes

    almonds, shredded
  • 1
    head garlic, cleaned
  • 4
    slices white bread
  • 700
    chicken stock, chilled
  • 75

    white wine vinegar
  • salt and freshly ground black pepper
  • 1
    bunch green grapes
  • crushed ice


1. Roast the almonds lightly in a frying pan. Grind them and the garlic cloves in a blender. 2. Remove the crusts, then cut bread into pieces. Moisten with enough chicken stock, and place in the blender. 3. Add the oil gradually while the motor is running. Add the vinegar and cold stock, slowly. 4. Season the soup and refrigerate until well chilled. Cut the grapes in half and remove the seeds. Add halved grapes and a scoop of crushed ice to soup just before serving. 5. Serve with black and green olives and crusty white bread.
