Ingredients (9)

70.00 g almonds — chopped
1.00 garlic — cloves
4.00 bread — white, slices
700.00 ml stock — chicken
75.00 ml oil
30.00 ml vinegar — white wine
sea salt and freshly ground black pepper
1.00 grapes — green
ice — crushed

Method:

1. Roast the almonds lightly in a frying pan. Grind them and the garlic cloves in a blender.
2. Remove the crusts, then cut bread into pieces. Moisten with enough chicken stock, and place in the blender.
3. Add the oil gradually while the motor is running. Add the vinegar and cold stock, slowly.
4. Season the soup and refrigerate until well chilled. Cut the grapes in half and remove the seeds. Add halved grapes and a scoop of crushed ice to soup just before serving.
5. Serve with black and green olives and crusty white bread.
