Ingredients (13)

410.00 ml flour — cake
125.00 g butter — chopped
60.00 ml castor sugar
1.00 eggs
5.00 ml vanilla — essence
WALNUT FILLING
60.00 g butter
60.00 ml icing sugar
125.00 g walnuts — ground
15.00 ml milk
COFFEE ICING
375.00 ml icing sugar
5.00 ml butter — soft
15.00 ml nestlé coffee powder
15.00 ml water — hot

Method:

1. Sift flour into a bowl, rub in chopped butter until mixture resembles coarse breadcrumbs. Add sugar, egg and vanilla, mix until well combined.
2. Turn pastry onto a lightly floured surface and knead lightly. Roll out to 5 cm thickness.
3. Using a plain cutter, cut out rounds, and place onto lightly greased baking trays. Bake in a preheated oven at 180 ºC for 12 to 15 minutes or until golden brown. Place on a wire rack to cool.
4. For the walnut filling: cream butter until light and fluffy, add the icing sugar, beat until well combined. Stir in walnuts and milk.
5. Spread half the biscuits with walnut filling. Top with remaining half. Place in the refrigerator for 30 minutes.
6. For the coffee icing: sift the icing sugar into a double boiler. Add butter and combine coffee powder and water together. Beat over simmering water until smooth.
7. Spread the biscuits with icing, place a small piece of walnut in the centre of each biscuit.
