Coffee custard tarts

    readymade puff pastry

    instant coffee granules

    castor sugar
  • 4
    large egg yolks

  • cinnamon sugar, to serve


15 to 20 minutes
Roll out the pastry on a lightly floured surface.
Cut out pastry rounds and line greased muffin tins. Refrigerate until ready to fill.
Dissolve coffee granules in 20 ml boiling water, add 25 ml milk and stir in the cornflour.
Stir this mixture into the remaining milk and add the cream.
Stir in the sugar until it has dissolved.
Whisk the egg yolks with a fork and then stir into the cream mixture.
Pour the mixture into the pastry cases to two-thirds capacity.
Bake in a preheated 250 °C oven for 15 to 20 minutes, until the custard is set and the pastry is crisp.
Cool and sprinkle over the cinnamon sugar.
