Ingredients (9)

30.00 ml oil
250.00 ml rice
250.00 ml coconut milk
100.00 ml water
50.00 ml coconut
1.00 ml nutmeg — ground
1.00 ml cloves — ground
salt and freshly ground black pepper
fresh coriander — chopped or lemon zest

Method:

Heat oil in a fairly large saucepan and stir-fry uncooked rice until completely coated with oil, about 2 minutes. Add coconut milk, water, coconut, nutmeg, ground cloves and salt and pepper to taste and bring to the boil. Reduce the heat and simmer until done, about 20 minutes. Loosen the rice grains with a fork, add a little chopped fresh coriander leaves or lemon rind to taste and serve.
Serves 4.
