Ingredients (12)

30.00 ml fresh chillies — 573
60.00 ml onion — chopped
15.00 ml garlic — cloves, chopped
2.00 bay leaves
4.00 bacon — rashers
salt and freshly ground black pepper — to taste
60.00 ml coconut milk
30.00 ml butter
20.00 ml liqueur — coconut-flavoured, optional
6.00 prawns — large
1.00 lemon — cut into wedges
fresh parsley — to garnish

Method:

Heat oil in a pan and sauté onion, garlic, bay leaves and bacon until onion is transparent. Sprinkle with salt and milled black pepper and sauté until lightly browned.
Add coconut milk and cook for about 5 minutes.
Add prawns and cook for about 5 minutes, or until prawns are firm and pink. Strain sauce into a sauce boat.
Serve prawns on heated dinner plates, accompanied by sauce, and garnished with lemon wedges and parsley.
