Ingredients (14)

1.00 garlic — cloves, crushed
30.00 ml lemon juice
1.00 fresh chillies — green or red, chopped
2.00 ml anchovy paste
25.00 g desiccated coconut
chilli powder — pinch
4.00 ml salt
250.00 g fresh mushrooms, wiped clean
500.00 ml long grain rice
500.00 ml water
250.00 ml coconut cream
2.00 green chilli — deseeded and chopped
30.00 ml fresh coriander
6.00 bananas — leaves

Method:

Mix garlic and lemon juice, then mix in chillies, anchovy paste, coconut (soaked in 60 ml (4 tbsp) boiling water for 30 minutes), chilli powder, salt and mushrooms (5 mm thick slices). Bring rice, water and coconut cream to boil and cook until liquid is almost all absorbed. Remove from stove and stir in chilli and coriander. Divide this, and coconut mixture, between banana leaves and fold over to make parcels. Steam in a steamer for 5 minutes.
Serves 4.
