Coconut meringues

  • 2
    large egg whites
  • 100
    icing sugar
  • 200
    dessicated coconut
  • 100
    dark chocolate, melted


Beat the egg whites until stiff.
Fold in the icing sugar.
Add the coconut and mix to combine well.
Place spoonfuls of the mixture on greased and lined baking trays and bake in a preheated 150 °C oven for 25 minutes or until light gold in colour.
To decorate, leave plain or dip into melted chocolate.
You could also drizzle the macaroons with white and dark chocolate for an attractive finish.
