3.00 eggs — extra-large, whites only
210.00 g castor sugar
5.00 ml vanilla — essence
100.00 g coconut

Method:

Preheat the oven to 140 ºC (275 ºF). Grease a baking sheet with margarine. Beat the egg whites until soft peaks are formed. Beat until all the sugar has been added. Add the vanilla essence and coconut and mix well. Drop teaspoonfuls on a greased baking sheet and bake for 25-30 minutes or until the cookies are pale brown. Cool on the baking sheet before transferring to a wire rack.
Makes 60 cookies.
