Ingredients (5)

ICE CREAM
2.00 eggs — extra-large
30.00 ml castor sugar
200.00 g white chocolate — broken into pieces
400.00 ml coconut milk
250.00 ml cream — fresh, chilled

Method:

Beat the eggs and sugar together in a glass bowl over boiling water until pale yellow.
Melt the chocolate in a glass bowl over boiling water or in the microwave oven. Stir occasionally. Add to the egg mixture, blending thoroughly. Add the coconut milk and mix.
Whip the cream until stiff and fold the cream into the mixture. Pour the mixture into a loaf tin, cover with plastic wrap and chill. Serve with the mango sauce.
