Coconut-crusted baked apples

Ingredients (5)

4.00 apples — granny smith
8.00 coconut biscuits
45.00 ml desiccated coconut
30.00 ml butter — melted
2.00 eggs — white

Method:

Halve apples horizontally. Remove pips and core. Place, cut side up, on an oiled baking sheet and bake in a preheated oven at 180 ºC for 15 to 30 minutes.
Meanwhile, place biscuits in a plastic bag and crush with a wooden mallet or rolling pin (crumbs should not be too fine, or powdery). Mix biscuits, desiccated coconut and butter and set aside.
Whisk egg whites until stiff and fold lightly into biscuit mixture.
Remove apples from oven, spoon mixture on top and bake for a further 10 minutes. Grill briefly to brown, if necessary.
Serve with thick cream or yoghurt.
