225.00 g flour — cake
10.00 ml Baking powder
salt — pinch
110.00 g margarine
50.00 g coconut
110.00 g castor sugar
1.00 eggs — extra-large, beaten
30.00 ml milk

Method:

Preheat the oven to 160 ºC (325 ºF). Spray two large baking sheets with non-stick spray. Sift together the cake flour, baking powder and salt. Rub in the margarine with your fingertips until the mixture resembles breadcrumbs. Add the coconut and castor sugar and mix. Add the egg and milk, mixing well to form a fairly stiff dough. Drop teaspoonfuls of the dough onto the prepared baking sheet, allowing room for them to spread. Bake for 10-15 minutes until the cookies just begin to turn brown.
Cool slightly on the baking sheet. Remove from the baking sheet and cool completely on a wire rack. Store in an airtight container.
Makes 72 cookies.
