Coconut cookies

    icing sugar, sifted
  • pinch salt

    lemon rind
  • 3
    egg whites
  • 1
    extra-large egg

    cake flour

    hazelnuts, finely chopped

Preheat the oven to 200 ºC (400 ºF). Spray two large baking trays with non-stick spray. Cream the butter. Add small quantities of icing sugar at a time, beating well after each addition. Add the salt and lemon rind and mix. Add the egg whites one at a time, followed by the whole egg, beating well after each addition. Add the coconut, cake flour and hazelnuts and mix well with a fork. Gather the dough together in a ball. Spoon teaspoonful onto the prepared baking trays and bake for 12 - 15 minutes or until pale brown on top. Cool slightly before removing from the baking trays. Cool completely on a wire rack before storing in an airtight container. Makes about 40 cookies.
