Ingredients (14)

10.00 ml curry paste — red
0.00 oil — for frying
400.00 ml coconut cream
500.00 g pumpkin
1.00 Litres stock — chicken
1.00 stalk lemon grass
2.00 onion
2.00 sticks celery stalks
5.00 ml coriander — ground
5.00 ml cardamom — ground
500.00 g noodles
0.00 onion — sliced
0.00 red chilli — sliced
0.00 fresh coriander

Method:

In a pan, fry curry paste with a little oil until fragrant.
Mix in
coconut cream and pumpkin.
Add remaining ingredients except noodles, fried onion, chilli and coriander.
Bring to a simmer and cook for 25 minutes, or until pumpkin is soft.
Put the noodles in individual bowls, spoon over the pumpkin mixture and sprinkle with fried onion, chilli and coriander leaves.
