450.00 g almonds — ground
450.00 g icing sugar — sifted
80.00 g cocoa powder — sifted
5.00 ml cinnamon — ground
2.00 ml cloves
2.00 ml coriander
3.00 eggs — white
45.00 ml brandy
120.00 g white sugar

Method:

Preheat the oven to 180 ºC (350 ºF). Spray two large baking trays with non-stick spray.
Combine the ground almonds, icing sugar, cocoa, cinnamon, cloves and coriander in a large mixing bowl. Mix well.
Beat the egg whites until foamy and add the brandy. Add to the dry ingredients and mix well. Knead to form a dough and wrap in plastic wrap. Chill for two hours.
Sprinkle half the white sugar on a surface suitable for rolling out the dough. Roll the dough out until 5 mm thick. Sprinkle the dough with the remaining sugar and roll it into the dough with the rolling pin. Prick with a fork. Cut out shapes with a cookie cutter and place …
