Club salad with blue cheese dressing

  • 250
    bow-tie pasta
  • 4
    rashers bacon
  • 750
    diced, cooked chicken
  • 1
    large green pepper, deseeded and diced
  • 6
    cherry tomatoes, halved
  • 125
    blue cheese
  • 125
  • 1
    clove garlic, crushed
  • salt and pepper to taste


Cook pasta in a large saucepan of boiling water until tender. Drain and keep moist.
Meanwhile, cook bacon in a frying pan over a moderate heat for 4 to 5 minutes, or until brown.
Drain on a paper towel.
In a bowl, combine pasta, bacon, chicken, green pepper and tomatoes.
For dressing:
In a food processor or electric blender, whirl the cheese, yoghurt, garlic and seasoning for 1 minute, or until smooth.
Pour over salad and toss lightly.
