Ingredients: 10.00 ml coriander seeds, crushed; 5.00 ml fennel seeds, crsuhed; 2.00 ml sea salt; 125.00 ml vinegar balsamic; 5.00 ml mustard powder; 15.00 ml olive oil; 500.00 ml rocket leaves tender, young; 500.00 ml cucumber thinly sliced; 250.00 ml rocket flowers; 500.00 ml celery stalks thinly sliced; 1.00 large orange peeled and cut into small pieces

500.00 ml	cucumber — thinly sliced

Method:

Put the first 6 ingredients in a screw-top jar and shake until smoothly blended. Mix all the salad ingredients and place them in a glass bowl. Keep chilled. Pour the salad dressing over just before serving. Serve with crusty brown bread, olives and thinly sliced mozzarella cheese. Serves 4.
