0.00 oil
2.00 kg onion — sliced
3.00 garlic — cloves
0.00 fresh thyme
1.00 bay leaves
1.00 Litres stock — beef
125.00 ml wine — white
0.00 sherry — medium cream
0.00 sea salt and freshly ground black pepper

Method:

Heat a little oil in a large pot. Add onion and garlic and sauté over low heat for about 30 minutes. The onion must be well browned and soft.
Add thyme to taste, bay leaf, stock, wine and sherry. Bring to the boil and simmer, covered, for about 30 minutes.
Season to taste. Serve with goat’s cheese toasts.
