Citrus-roasted fish with capers

    thick fish fillets
  • 30
    olive oil
  • 1
    lemon, the juice
  • seasalt and freshly ground black pepper
  • 1
    lemon, thinly sliced
  • 1
    orange, thinly sliced
  • 60
  • extra olive oil


Preheat the oven to 200 °C.
Place the fish fillets in an oven pan.
Blend the olive oil, lemon juice, salt and pepper and rub the mixture into the fish.
Place two lemon and two orange slices on top of each fillet so they overlap.
Scatter the capers on top, drizzle with extra olive oil and bake for 10 to 15 minutes, depending on the thickness of the fillets.
Once the fish turns opaque, place it under the oven grill to brown.
Serve with lightly fried baby marrow strips and boiled or mashed potatoes.
