Method:

1. Mix the lemon juice and honey into the mascarpone. Mix
the orange juice and brandy or liqueur in a separate bowl.

2. Cover the base of a pudding dish or individual glasses
with a layer of sliced muffin. Drizzle with orange juice and
brandy or liqueur and then cover with a layer of fruit. Top
with a layer of mascarpone, before repeating the layers.
Chill until you are ready to serve.
