Ingredients (14)

90.00 g flour — cake
60.00 g flour — wholewheat
80.00 g oats
1.00 ml salt
5.00 ml Bicarbonate of soda
45.00 ml brown sugar
5.00 ml cinnamon — ground
cloves — ground, pinch
75.00 g raisins
1.00 apple — grated
250.00 ml Buttermilk — or plain yoghurt
60.00 ml oil
75.00 ml honey
1.00 eggs — slightly beaten

Method:

1. In the mixing bowl of a food processor, mix together the flours, oats, salt, bicarb, sugar, spices, raisins and grated apple.
2. Combine remaining ingredients and add to the apple mixture. Mix at low speed to combine.
3. Spoon into well-greased muffin pans and bake at 180 ºC for 15 to 20 minutes. Remove muffins from pan and cool on a wire rack. Serve slightly warm.
