Ingredients (11)

250.00 g margarine
250.00 ml sugar
250.00 ml raisins
250.00 ml currants
250.00 ml sultanas
250.00 ml glacé cherries — quartered
250.00 ml walnuts — finely chopped
2.00 eggs — extra-large
5.00 ml vanilla — essence
125.00 ml brandy
400.00 g Marie biscuits — crushed

Method:

Spray a 1 litre ring dish with non-stick spray. Slowly melt the margarine and sugar together in a saucepan. Stir until the mixture has melted. Add the raisins, currants, sultanas and cherries and bring to the boil. Simmer for 5 minutes, taking care not to burn the mixture. Stir continuously. Remove from the heat and cool slightly. Add the walnuts. Whisk the eggs, vanilla essence and brandy together. Add a little of the fruit mixture to the egg mixture, stirring well. Add to the remaining fruit mixture, return to the stove and heat for 1-2 minutes. Remove from the heat and add the crushed biscuits. Turn into the prepared ring dish, pressing the mixture down firmly. Chill until firm, preferably overnight. Turn out onto a serving platter and cut into slices.
Serve with custard or brandy sauce.
Serves 8-10.
