Ingredients (7)

3.00 eggs — extra-large, whites only
325.00 g castor sugar
5.00 ml cornflour
2.00 ml vinegar
50.00 ml water — boiled
TOPPING
strawberries — or other fruit
cream — fresh, whipped

Method:

1. Grease a baking sheet, cover with greaseproof paper and grease the paper.
2. Put all the ingredients, except the boiling water, into a bowl. Beat.
3. Gradually trickle in the boiling water, then beat for 15 minutes on high speed.
4. Spread half of the mixture in a circle about 3 cm high on the baking sheet. Use remaining meringue to pipe rosettes around the edge of the circle.
5. Bake in a preheated oven at 125 ºC for 45 minutes, then switch off the oven and leave meringue inside to dry out.
6. Peel off the greaseproof paper and place the meringue on a serving plate. Top with strawberries and cream.
