Choux puffs

    cake flour
  • 2
    extra large eggs
  • 5
    baking powder


1. Heat water and butter and bring to simmering point. 2. Remove pan from stove and add the flour in one batch. Stir until the mixture comes away from the sides of the pan and forms a ball. Return to heat and cook for 1 minute while stirring. Cool slightly. 3. Beat in the eggs one at a time, beating after each addition until mixed in. 4. Pipe or spoon small mounds of the mixture onto greased baking sheets, sprinkle with a little water and bake at 200 ºC for 10 minutes, turn oven down to 180 ºC and bake further until golden brown, about another 15 minutes. 5. Cut open, remove soft centres with a teaspoon and cool. Fill with salmon cream cheese spread (see recipe). Makes 30
