6.00 eggs
225.00 g castor sugar
2.00 ml vanilla — essence
80.00 g flour — cake
50.00 g cocoa powder
100.00 g butter
45.00 ml liqueur
chocolate — ganache
525.00 g chocolate — chopped
225.00 ml cream
45.00 ml butter

Method:

1. Grease and line a 23 cm round cake tin.
2. Put the eggs, sugar and vanilla essence in a bowl. Stand it over a pan of hot water and whisk until thick. Remove from the heat and whisk until cool.
3. Sift together the flour and cocoa and fold into the whisked mixture.
4. Beat the butter with a wooden spoon until it is about the same consistency as the egg mixture and fold it in.
5. Bake at 180 ºC for about 40 minutes, or until the top springs back when lightly touched.
6. Cool the cake, then cut into three layers.
7. For the chocolate ganache: bring cream and butter to the boil and pour over chocolate pieces. Stir until all the chocolate has melted. Soften it in tepid water just before using.
8. Sprinkle each layer of torte with a little liqueur and then spread with a layer of ganache. Finish off the layering effect by carefully and smoothly spreading the ganache over the torte. Cut the torte with a cool, wet knife.
