CAKE
300.00 g butter
250.00 ml castor sugar
4.00 eggs — extra-large
250.00 ml flour — self-raising
125.00 ml cocoa powder
75.00 g dark chocolate — finely chopped
ICING
100.00 g butter
450.00 ml icing sugar — sifted

Method:

Preheat the oven to 160 ºC (325 ºF). Spray a 20 x 20 cm cake tin with non-stick spray.
Cream the butter until pale and fluffy. Add small quantities of the castor sugar while beating continuously. Add the eggs one by one, beating well after each addition. Sift in the self-raising flour and cocoa, beating until well blended.
Add the chocolate and fold in. Turn into the prepared cake tin and bake for 1 hour or until a testing skewer comes out clean when inserted into the centre of the cake. Cool in the tin for a few minutes before turning out onto a wire rack to cool completely. Cut into squares.
Beat the butter for the icing until soft. Sift in small quantities of the icing sugar while beating continuously. Ice each square with the icing.
Makes about 16 squares.
