575.00 ml flour — cake
50.00 ml cocoa powder
125.00 ml sugar
250.00 g butter — or margerine
FILLING
4.00 eggs — extra-large
500.00 ml brown sugar — soft
75.00 ml flour — cake
10.00 ml Baking powder
salt — pinch
300.00 ml walnuts — chopped
150.00 ml glacé cherries — chopped
250.00 ml coconut
10.00 ml rum — or rew wine
TOPPING
200.00 g dark chocolate — broken into squares
glacé cherries — or walnuts, chopped

Method:

Preheat the oven to 180 ºC and spray a shallow 25 x 25 cm ovenproof dish or tray with non-stick spray. Sift the flour and cocoa together and add the sugar. Rub in the butter and knead to form a dough. Press the dough into the bottom of the oven tray and bake for 15 minutes. Meanwhile make the filling: Beat the eggs and sugar together until thick and creamy. Sift the dry ingredients together. Fold the dry ingredients, nuts, cherries, coconut and rum or red wine into the egg mixture. Spoon the mixture on top of the hot crust and bake for 30 minutes. Remove from the oven and leave to cool. Melt the chocolate in a glass bowl over hot water or in the microwave oven and spread over the hot cake layer. Sprinkle with chopped nuts and glacé cherries and leave to cool. Use a hot knife to cut into squares.
Makes about 30 squares.
