230.00 g butter — soft
100.00 g sugar
15.00 ml cocoa powder
280.00 g flour — self-raising
160.00 g coconut
ICING
200.00 g icing sugar
15.00 ml cocoa powder
75.00 ml water — boiled

Method:

Preheat the oven to 190 ºC (375 ºF). Spray a 32 x 23 cm baking tray with non-stick spray. Beat the butter and sugar together until light and creamy. Add the cocoa and beat well. Add the self-raising flour by the spoonful while beating continuously. Add the coconut and fold in until well blended. Press the mixture into the prepared baking tray and bake for 15 minutes or until done. Cool slightly before cutting into squares. Cool completely in the baking tray before icing. ICING: Sift the icing sugar and cocoa together. Add small quantities of the boiling water at a time while beating continuously with a wire beater – the icing should not be too runny. Spread the squares with the icing and leave until set before removing from the pan.
Makes 24 cookies.
