Chocolate sponge cake

    large eggs, separated
  • 160
    castor sugar
  • 12
    lemon juice
  • 100
    cake flour
  • 20
    cocoa powder
  • pinch of salt
  • 100
    icing sugar
  • 30
    cocoa powder


50 to 60 minutes
Beat the egg whites until stiff.
Gradually beat in 100 g of the castor sugar.
Beat in the lemon juice. Set aside.
In a separate bowl, beat the egg yolks and the remaining sugar until creamy.
Fold the egg yolks into the egg white mixture.
Sift a layer of flour, cocoa and salt over the egg mixture.
Fold in gently.
Repeat to fold in the remaining dry ingredients.
Pour the mixture into a greased cake tin.
Bake in a preheated 160 °C oven for 50 to 60 minutes until cooked through.
