Ingredients (5)

200.00 g dark chocolate
150.00 ml milk
30.00 ml cream — thick
30.00 g castor sugar
30.00 g butter — unsalted, diced

Method:

Melt chocolate in the top of a double boiler over boiling water and set over moderate heat, stirring from time to time.
In a saucepan, bring milk, cream and sugar to boiling point, stirring gently with a whisk. Pour this mixture onto melted chocolate, stirring continuously.
Return sauce to saucepan and let it bubble for 15 seconds.
Remove from stove and beat in butter, a little at a time, until sauce is smooth and completely blended.
Reheat for a second and serve warm.
Makes about 400 ml (1 3/5 cups).
