Chocolate mousse in Easter egg nests

  • 6
    medium-sized chocolate Easter eggs
  • 400
    milk chocolate, broken into squares
  • 180
  • 30
  • 500
    cream, chilled
  • berries and mint leaves
  • 6
    spun sugar nests


30 mins (chill time)
Heat a knife in boiling water and remove the tops of the Easter eggs length ways.
Melt the tops with the milk chocolate squares and milk in a glass bowl over boiling water or in the microwave oven.
Stir in the oil and leave to cool.
Whip the cream until stiff and fold into the cooled chocolate mixture. Chill until firm (about 1/2 hour).
Spoon or pipe into the bought Easter eggs.
Top with little eggs or Smarties.
Place the eggs onto 'nests' of marshmallows and colourful sweets.
