Chocolate maize-meal volcanoes with chocolate sauce

    egg yolks

    (1/2 cup) castor sugar

    dark milk chocolate broken into pieces

    unsalted butter

    (1/4 cup) maize-meal

    (1/4 cup) cake flour

1. Pre-heat oven to 200°C. Grease muffin pans or metal moulds.
2. Beat eggs, egg yolks and castor sugar until thick and fluffy.
3. Melt chocolate and butter together in a double boiler over boiling water, or in microwave oven. Add slowly to the egg mixture.
4. Sift maize-meal and cake flour over mixture and fold in. Fill each mould or muffin pan three-quarters way up. Bake for 10-15minutes, until firm to the touch (the inside should still be runny).
5. Turn out onto a side plate and cut one side of each "volcano" open. Serve immediately with a variety of fresh berries or strawberries, and a dollop of cream mixed with plain yoghurt. Sieve castor sugar and cocoa powder on top.
