Chocolate hazelnut spring rolls

    spring roll wrappers
  • 100
    good-quality chocolate, melted
  • 50
    hazelnuts, chopped
  • sunflower oil for frying
  • ice cream to serve
  • icing sugar to dust
  • mint to garnish

Lay a single spring roll wrapper on a clean surface.
Cover the remaining wrappers with a damp cloth.
Sprinkle nuts on the wrapper and top with melted chocolate.
Follow the packet instructions on how to fold a spring roll and repeat with the remaining wrappers.
Heat enough oil in a heavy-based saucepan to shallow fry.
Add a cube of bread to test the heat of the oil: it should turn golden within a few seconds.
Fry two spring rolls at a time until golden. drain on absorbent paper.
Serve with ice cream and drizzle with chocolate.
Garnish with mint and dust with icing sugar.
