CHOCOLATE FILLING
300.00 ml water — boiled
375.00 ml white sugar
30.00 ml butter — or margerine
125.00 ml cornflour
65.00 ml cocoa powder — sifted
1.00 ml salt
250.00 ml water — cold
20.00 ml vanilla — essence
1.00 sponge cake
380.00 g Nestlé Caramel Treat
2.00 chocolate — Peppermint Crisp
2.00 artificial cream

Method:

Prepare the chocolate filling: Microwave the boiling water, sugar and butter or margarine in a deep mixing bowl at 70 percent power, stirring every 30 seconds until the sugar has dissolved. Microwave until the mixture comes to the boil. Mix the cornflour, cocoa and salt with the cold water and stir in a little of the butter mixture. Add the rest of the butter mixture and microwave on 100 percent power until thick and cooked. Stir at one minute intervals. Stir in the vanilla essence and set aside to cool. Meanwhile cut the sponge loaf into three slices lengthwise and place the bottom layer of the loaf in a deep loaf tin. Beat the caramel condensed milk lightly with a fork to soften it. Spread a layer on the bottom slice, followed by a layer of the cooled chocolate filling, a layer of whipped artificial cream and a layer of grated Peppermint Crisp. Repeat the layers twice more until all the ingredients have been used. Chill overnight. Cut into slices the next day and serve with vanilla ice cream as a dessert or with coffee.
