Chocolate cups with fresh berries

  • 200
    dark chocolate, coarsely chopped
  • 250
  • 2
    extra-large egg whites
  • 65
    castor sugar
  • coffee liqueur (optional)
  • fresh berries


Melt the chocolate and cream over low heat until the mixture is smooth. Leave to cool to room temperature. Beat the egg whites until soft peaks form. Add the castor sugar by the spoonful, beating continuously until the mixture is stiff and shiny. Carefully fold into the chocolate mixture. Spoon the mixture into cups or small bowls and cool until firm. Pour a thin layer of liqueur over each cup if desired and serve with fresh berries.
