Chocolate cake with strawberries and cream.

Ingredients (15)

CAKE:
1 cup flour
1 cup castor sugar
2 1/2 tsp Baking powder
salt — just a pinch
3 Tbs cocoa powder
1 cup water — boiled
2 eggs — large
5 ml vanilla — essence
Centre:
125 ml cream — fresh
3 Tbs sugar
ICING:
100 g chocolate — Cadbury wholenut
1 chocolate — Bar One
2 Tbs butter
4 Tbs milk
strawberries — to top

Method:

Cake:
Mix flour, sugar, baking powder and salt in a mixing bowl and set aside.
In another mixing bowl, add cocoa and boiling water and beat.
Add the vanilla essence and eggs and beat.
Add the cocoa mixture to the dry ingredients and mix on high speed for 60 seconds.
Pour the batter into a greased microwave proof dish or 2 liter ice cream container.
Place in the center of the microwave and bake on high for 6½ min.
Once baked, leave in the microwave for 5 min before opening the microwave.

Centre:
Once the cake is cooled, cut through the center.
Beat the cream and sugar till stiff peaks are formed.

Smear cream on bottom layer of the cake and cover with the top.

Icing:
Melt the chocolate, Bar-one, butter and milk over a low heat on the stove top.
Once melted and mixed, pour over cake and decorate with strawberries.
