Chocolate and raisin bread-and-butter pudding

Ingredients (9)

150.00 g dark chocolate
500.00 ml cream
60.00 ml rum — dark
110.00 g castor sugar
75.00 g butter
5.00 ml cinnamon — ground
3.00 eggs
9.00 white bread — day-old, slices, crusts removed, quartered
125.00 ml chocolate — coated raisins

Method:

Preheat the oven to 180°C.
Combine the chocolate, cream, rum, sugar, butter and cinnamon in a heatproof bowl.
Place over a double boiler and stir until the
chocolate has melted.
Whisk the eggs and pour into the chocolate mixture.
Spoon half of the mixture into a deep baking dish and arrange a layer of bread
on top. Sprinkle with chocolate-covered raisins.
Pour over the rest of the mixture
and follow with another layer of bread and chocolate-covered raisins. Press
down gently and leave to stand for 2 hours.
Place in the oven and bake
for 30 to 35 minutes.
Serve warm with dollops of thick cream.
